Welcome to The Foodie Express!
A husband-wife duo, we are engineers by profession and foodies at heart. This website, born out of sheer love for cooking and eating, aims to provide easy-to-follow recipes. Our goal is to share with you the recipes we create at home inspired by our culinary experiences. As far as possible, we try to use fresh ingredients and no artificial additives such as food color and preservatives.
I, Vidula, was born and brought up in Mumbai and my husband, Rakesh, grew up in Sawantwadi which is a town in the Western coastal belt (Konkan) of Maharashtra. Growing up, our mothers and grandmothers taught us to cook traditional recipes, using traditional ingredients and methods. Summer vacations in our grandmothers’ kitchens were the best time and place to get a free reign in the kitchen to experiment under their loving and encouraging guidances. In spite of having different backgrounds, we have been able to embrace foods from both the regions and grow our culinary understanding.
Prior to coming to the US, our food experiments were one-off and heavily influenced by Indian food. Food at my home was always simple, vegetarian Maharashtrian fare. My father introduced my sister and I to eating chicken. Our neighbors and friends introduced us to eating seafood and mutton. My mother never cooked anything non-vegetarian so I started cooking dishes that she wouldn’t when I was in high school. The first dish I remember making was Indian-Chinese fried rice. This was the true beginning of my culinary journey. What was such a special treat back then is a go-to meal now.
Living in the US for ten odd years, has exposed us to a lot of global cuisines and new cooking techniques. Living independently while studying and working here has given us a chance to cook on routine basis as opposed to a one-off experiment at home. Today, as our tastes continue to evolve, so do our kitchen experiments. We have started experimenting with dishes from various cuisines and with our own interpretation of the classics. All our recipes are homemade, some inspired by dishes we eat in restaurants, some traditional gems that have been handed down for generations and some created purely by what is available in the fridge and pantry! We hope to combine what we continue to learn, with what we enjoy, to create and provide recipes on this website.
We sincerely believe that the ultimate aim of food is to provide nutrition as well as satisfaction and our recipes are geared to reflect just that 🙂 So come join us, as we journey through the bylanes of flavor town, moving to nutrition boulevard, finally arriving at our destination of contentmentville!
